Crunchy Maple Pecan Chicken

I was craving something hearty and crunchy but not fatty. So I whipped this little number up out of pure hunger and imagination haha. It's something I enjoy eating very much =)

I was craving something hearty and crunchy but not fatty. So I whipped this little number up out of pure hunger and imagination haha. It's something I enjoy eating very much =)

Instructions

  1. Grease frying pan with cooking spray and heat up on medium heat. **If you want more of a fried taste, use oil or butter of your choice.**

  2. While frying pan is warming, slice chicken breast into even strips. How long or how thick they are is up to you. **The THICKER the strip, the longer they'll need to cook.**

  3. Crack 1 or 2 eggs into a bowl and whisk. Set it aside and pour 3-4 cups of maple pecan cluster cereal into flat plate or wide pan or bowl. Use the bottom of a heavy mug or cup to crush cereal to preferred size. **You can use any technique you'd like to crush the cereal. Using a heavy mug worked well for me.**

  4. Dip chicken strips into egg mixture. Make sure it's all covered in the egg. Then roll around 2-4 times in crushed cereal. Put the chicken on the heated skillet. It's ok if some of the cereal falls off. Let cook for about 5-8 minutes on each side (time may vary depending on how thick the strips are). It's okay if the cereal gets a little burned.

  5. Make sure the chicken is thoroughly cooked, on the inside and out, before taking it off the skillet. NO PINK. You can make a delicious chcken salad with lettuce, thinly sliced apples, and dried cranberries. Put them in a delicious sandwich. Or, if you're like me, get a little curious and try it with maple syrup haha! Enjoy =)
