Step 1
Make the Pork:
Pour the oil into a large skillet and heat to medium-high.Season the pork generously with salt and pepper. Put the pork into the hot skillet and sear all sides until golden brown.
Transfer the pork to the crockpot and pour in the sarsaparilla. Set to low and cook for 6 hours.
Remove the pork from the crockpot and discard the liquid. Shred the meat with two forks and pour the barbecue sauce over and mix.

Step 2
Make the Creamy Apple Slaw:
Get yourself a large salad bowl. Pour the mayonnaise, yoghurt, mustard, lemon juice and salt and pepper in it and give it a good whisk. Check the seasoning and adjust to taste.Finely shred the cabbage, carrot and apple and add them to the dressing in the bowl. Toss everything together, making sure the vegetables are evenly coated with the dressing.
