Crockpot Chicken Chili

Chili is just one of those comfort foods that warms your insides. For that reason it's great in the winter, but it's also a crowd-pleasing meal for any time of year, especially when the crockpot does the work and lets you have fun doing more important things! The recipe I am going to share with you is made in our family crockpot, otherwise known as “old reliable.” You can cook pretty much anything in that sucker, but this chili will undoubtedly be one of your favorites. Not only is it low calorie and low fat, but it is loaded with fiber and protein to keep you full. Plus, my homemade taco seasoning gives it a kick of flavor. Simply add the ingredients to the crock pot, let them slowly cook, and by the end of the day the whole house will be filled with the comforting smell of homemade chili.

You Will Need (12 things)

  • 24 oz Boneless skinless Chicken breasts
  • 1 oz Taco Seasoning
  • 1 cup Tomato Sauce
  • 1 Onion , chopped
  • 1 16 oz Can of black beans
  • 1 16 oz Can of Kidney Beans
  • 1 10 oz Bag frozen Corn kernels
  • 2 14.5 oz Cans diced Tomatoes with chiles
  • Chili Peppers , chopped
  • ¼ cup chopped fresh Cilantro
  • 1 tsp Chili Powder *
  • 1 tsp Cumin *

Steps (3 steps, 360 minutes)

    Combine beans, canned tomato, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker.

    *These measurements make a milder chili. Add more cumin and chili powder for more kick, and/or add some chili peppers to the mix.

    Cook on low for 10 hours or on high for 6 hours.

    Half hour before serving, remove chicken and shred with a fork. Return chicken to slow cooker and stir in. Serve with fresh cilantro, cheese and/or sour cream.
