Cream cheese and bacon because you deserve it.
This dish would make a great side to other wonderful foods we all deserve like hamburgers and baked potatoes. It's creamy, which instantly makes it a million times better, plus it's corn. You just can't go wrong with corn.

  • Step 1

    Add corn to a pot of water over high heat and bring to a boil; lower heat and simmer for 8 minutes or until corn is tender. Drain; cut off kernels and set aside.

    Add bacon to a skillet over medium heat; cook through. Transfer bacon to a paper towel and drain; crumble.

  • Step 3

    Leave about 1 tablespoon of bacon grease in the skillet and discard excess grease. In the skillet over medium heat, add bell peppers, onion, corn kernels, sugar, salt, pepper, cayenne and chicken broth (if desired; to help prevent burning and add flavor). Cook for 10 minutes or until veggies are tender.

  • Step 4

    Add cream cheese and half and half. Cook for 3-4 more minutes until the cheese has fully melted. Transfer to a serving dish; garnish with green onion and crumbled bacon.
