Gluten and Dairy Free Creamy Chicken Soup

You Will Need (10 things)

  • 2 Tbsps Olive Oil
  • 2 Garlic Cloves minced
  • 1 Onion diced
  • 225 g Mushroom(s) sliced
  • 2 Carrot(s) sliced
  • 1 tsp Dried Thyme
  • 1 l Chicken Stock
  • 250 ml dairy free milk
  • 100 g Rice
  • 2 Chicken breasts diced

Steps (4 steps, 30 minutes)

    Add the olive oil to a large pan over a medium heat
    Stir in the garlic, onion, mushrooms, carrots and chicken

    Sauté for 5 minutes

    Pour in the chicken stock, milk, thyme and seasoning

  4. 4

    Bring to the boil and add in the rice
    Simmer until the chicken is cooked and the rice is tender about 12-15 minutes
