Gluten and Dairy Free Creamy Chicken Soup

You Will Need (10 things)
- 2 Tbsps Olive Oil
- 2 Garlic Cloves minced
- 1 Onion diced
- 225 g Mushroom(s) sliced
- 2 Carrot(s) sliced
- 1 tsp Dried Thyme
- 1 l Chicken Stock
- 250 ml dairy free milk
- 100 g Rice
- 2 Chicken breasts diced
Steps (4 steps, 30 minutes)

Add the olive oil to a large pan over a medium heat
Stir in the garlic, onion, mushrooms, carrots and chicken -

Sauté for 5 minutes

Pour in the chicken stock, milk, thyme and seasoning

Bring to the boil and add in the rice
Simmer until the chicken is cooked and the rice is tender about 12-15 minutes
