Crispy outside with a spicy creamy inside
This isn't your standard chicken pie, its creamy filling is infused with flavour in every single bite.
In a pan, add in some butter and sautee your chopped onion, garlic, pepper and chillies. Once your vegetables have softened up, add your chicken and cook for a couple of minutes, followed by all your spices.
Add in the carrots chopped in small pieces as well as the sweetcorn and mushrooms and cook for around 3-4 more minutes. You can now add in some tomato paste.
Next, add in your single cream and mix everything together. Let your filling cool down for at least half an hour before using it.
Once the filling has had some time to cool down, get a baking tray and place the puff pastry on the tray and add your filling all over it. Top everything up with another layer of puff pastry and seal the edges. You can cut the pastry in strips to decorate the top of the pie.
Lastly, beat and egg and brush it on your pie and sprinkle some sesame seeds before baking it in the over until the pastry looks nice and golden.
