Step 1Heat the oil & butter together.
Mix together the flour, onion salt, garlic powder & paprika.

Step 2Coat the chicken in the flour mixture.
Fry in the oil.
Place into a dish.

Step 3Gently fry the onion, mushrooms & garlic.

Step 4Add the wine & let reduce a little.

Step 5Pour in the chicken stock & mascarpone cheese.
Stir to combine.
Allow to simmer & thicken.

Step 6Pour sauce over chicken.
Season with salt & pepper.

Step 7Serve.
