Step 1Place courgettes in a sieve & put salt on top.
Leave to sit for 10 mins.
Squeeze as much liquid from the courgettes as you can.

Step 2Mix all ingredients together (except the oil).

Step 3Heat the oil.
Place spoonfuls of the mixture into the pan.
Cook for approximately 3 mins & then flip over & cook til done.
