This is a good way to use up leftover courgettes. It tastes really moist. You can add icing if you wish but it doesn't need it.

You will need

250 g Plain Flour 375 g Sugar 65 g Cocoa 2 tsp Bicarbonate Of Soda 1 tsp Baking Powder 1/4 tsp Salt 1 tsp Cinnamon 4 Eggs 350 ml Oil 340 g Courgettes Grated 90 g Walnuts Broken

Description

This is a good way to use up leftover courgettes. It tastes really moist. You can add icing if you wish but it doesn't need it.

Instructions

1. 

   Heat oven 180 degrees. Mix all dry ingredients together.

2. 

   Mix in the eggs & oil.

3. 

   Fold through the courgette & nuts.

4. 

   Pour into a tin & bake for 50 mins to 1 hr until cooked through.

5. 

   Leave to cool. Serve.
