Coq au Van
Easy, one pot dish.
Coat the chicken in the seasoned flour.
Fry in a little oil until brown.
Remove chicken from the pot & brown the veg.
Return the chicken to the pot.
Add the red wine & reduce slightly.
Mix the stock, tomato purée & bay leaves together
Add the stock to the pot.
Bring to a boil then reduce heat to simmer.
Continue to simmer until the chicken is cooked through.
Remove the bay leaf.
Just before the cooking time is up, add the mushrooms.
Serve with mashed potatoes.
