A combination of vanilla cupcakes, chocolate cupcakes and cookies... what else could you possibly need?
Makes approx. 16 and 15 extra cookies!

You Will Need (10 things)

  • 1 tsp Bicarbonate Of Soda
  • 75 g Light Brown Sugar
  • 350 g Icing Sugar
  • 180 ml Milk
  • 3 tsp Vanilla Extract
  • 4 Egg(s)
  • 390 g Margarine
  • 250 g Caster Sugar
  • 115 g Margarine
  • 460 g plain Flour

Steps (21 steps, 60 minutes)

    Pre-set your oven to 180 degrees.

    Beat together 200g caster sugar and 115g margarine until light and fluffy.

  3. 3

    Sift together 310g of the plain flour and the baking powder.

  4. 4

    Place 120g of the flour mix in another bowl and sift in the cocoa powder.

    Gradually add the eggs to the sugar/margarine mix beating well. Add the vanilla. Then separate the mixture into two mixing bowls and add the plain flour to one and mix, then 88ml milk and mix until smooth Then add the cocoa/flour mix to the other bowl and do the same.

    Line a tray or two with 16 cupcake cases.

    Spoon the mixtures onto the cases so they're half vanilla and half chocolate.

    Place these into the oven for around 25 minutes while you start on making the mini cookies.

    Beat together 100g of margarine, 50g of caster sugar and the brown sugar.

    Gradually beat in an egg.

    Add 150g flour, 1/2tsp vanilla and the bicarb of soda.

    Line a small tray with baking paper.

    Using a teaspoon, make 16 small lumps of mixture and put the rest aside for making more cookies later. You can refrigerate it if you fancy.To bake the cookies, stir in chocolate and bake for 15 mins at 180 degrees.

    Press in chocolate chips to each lump.Bake at 180 degrees until golden.

    sift the icing sugar into a bowl then add 175g margarine, 2tsp milk and 6 drops vanilla.

    Beat it all together until smooth and pale.

    Leave the cupcakes and cookies out to completely cool.

    Place the icing in a piping bag or bottle, whatever floats your boat.

    Pipe a swirl on each cake, leaving a small circle in the middle to keep the cookies generally cookie-like.

    Place a cookie in the centre of each swirl.

    Eat, or give them to someone else.... yeah, just eat them!
