Step 1Place the icing sugar and condensed milk in a bowl

Step 2Pour in the coconut vodka.

Step 3Stir until well combined.

Step 4Stir in the coconut.

Step 5Cover a baking tin with cling film and scoop half of the coconut into the tin, packing firmly into place.

Step 6Add a couple of drops of red food colouring to the remaining coconut to give it a nice pink shade.

Step 7Scoop the pink coconut on top of the white and pack into the tin.

Step 8Refrigerate for a few hours before cutting into cubes.
