An easy to make biscuit.
You can coat with chocolate if you like.
Heat oven 180 degrees.
Cream butter & sugar together.
Add egg & vanilla.
Stir to combine.
Stir in flour, coconut & baking powder.
Scoop the mixture onto a tray. You may need to squeeze it together.
Bake for 15 mins until golden brown.
Coat the underside with melted chocolate.
