Step 1Cook the onion & garlic in the oil until soft.

Step 2Stir in the carrots & ginger.
Cover the pot & cook for 8-10 mins until the veg is soft.

Step 3Pour in the stock & coconut milk.
Bring back to the boil.
Add seasoning to taste.

Step 4Remove from the heat & blend until smooth.

Step 5Serve.
