Easy to make soup.
Quick to make & can easily be doubled up.
The amount of ingredients you use is not really important.
Cook the onion & garlic in the oil until soft.
Stir in the carrots & ginger.
Cover the pot & cook for 8-10 mins until the veg is soft.
Pour in the stock & coconut milk.
Bring back to the boil.
Add seasoning to taste.
Remove from the heat & blend until smooth.
