This was my first attempt at making Churro's. My family loved them. They told me they are better than the ones you can buy at the street markets. They are much softer than those ones. The recipe is very easy to make. It is a little time consuming as you can not over load the pan when frying them.

Heat the oil to 360 degree. In a pan heat the water & butter to a rolling boil. In a separate bowl combine the sugar & cinnamon. Set aside.
Combine the flour & salt in a bowl.
Add flour mixture to the water & butter & mix until it forms a ball of dough.
Remove from the heat add the eggs one at a time. Stir thoroughly.
Place into a piping bag fitted with a star nozzle. Pipe a line of dough (approx 4 inches) into the hot oil. Fry until golden brown on one side. Turn & cook through.
Remove from pan & drain on kitchen towel. While the Churro's are still hot, roll in the cinnamon sugar.
Continue until all the dough is used. These are delicious served with chocolate sauce or just as they are with the cinnamon sugar.
