A love a mug cake! What's not to like about cake you can make in 10 minutes? I have made chocolate courgette cake before but never as a mug cake. This is more moist than the usual chocolate mug cakes that I make (which cake be a bit dry and gluey at times) and has a nice open texture. This makes one fairly large cake. Cut it in half and share it, or devour it all by yourself!

Description

A love a mug cake! What's not to like about cake you can make in 10 minutes? I have made chocolate courgette cake before but never as a mug cake. This is more moist than the usual chocolate mug cakes that I make (which cake be a bit dry and gluey at times) and has a nice open texture. This makes one fairly large cake. Instructions

  1. Small 2019 04 14 170605 img 20190414 162825

Add the vegetable oil, milk, vanilla extract, egg and sugar to your mug.

  2. Small 2019 04 14 170655 img 20190414 162921

Stir until smooth. It should look something like this.

  3. Small 2019 04 14 170730 img 20190414 163400

Add the flour, baking powder, salt, cocoa powder, and stir until it is smooth, thick and glossy.

  4. Small 2019 04 14 170847 img 20190414 163523

Grate your courgette and then squeeze out the excess water. I did this by squeezing it in my fist over the sink.

  5. Small 2019 04 14 170947 img 20190414 163627

Fold the courgette into your mug mixture.

  6. Small 2019 04 14 171035 img 20190414 163954

Microwave for roughly 2 minutes (I have a 800 watt microwave). It will get fairly tall, if you have used a similar sized mug to me it may ooze over the top. Catch the drips by putting it on a plate. It should be glossy and sticky on the top when you take it out and cooked all the way through. Enjoy!
