Chocolate Courgette Mug Cake
A moist and fluffy version of the standard chocolate mug cake

A love a mug cake! What's not to like about cake you can make in 10 minutes? I have made chocolate courgette cake before but never as a mug cake. This is more moist than the usual chocolate mug cakes that I make (which cake be a bit dry and gluey at times) and has a nice open texture. This makes one fairly large cake. Cut it in half and share it, or devour it all by yourself!

You Will Need (13 things)
- 2 tbsp Vegetable Oil
- 1 large Egg
- 1 tbsp Milk
- 1 tsp Vanilla Extract
- 3 tbsp Light Brown Sugar
- 4 tbsp Flour
- ¼ tsp Baking Powder
- A pinch Salt
- 2 tbsp grated Courgette
- 2 tbsp Cocoa or Cocoa Powder
- 1 large Mug
- Microwave
- Spoon fork or mini whisk
Steps (6 steps, 10 minutes)

Add the vegetable oil, milk, vanilla extract, egg and sugar to your mug.

Stir until smooth. It should look something like this.

Add the flour, baking powder, salt, cocoa powder, and stir until it is smooth, thick and glossy.

Grate your courgette and then squeeze out the excess water. I did this by squeezing it in my fist over the sink.

Fold the courgette into your mug mixture.

Microwave for roughly 2 minutes (I have a 800 watt microwave). It will get fairly tall, if you have used a similar sized mug to me it may ooze over the top. Catch the drips by putting it on a plate. It should be glossy and sticky on the top when you take it out and cooked all the way through.
