These indulgent chocolate cookies are infused with Hernö Old Tom Gin and baked with egg whites to make them extra fluffy.
These indulgent chocolate cookies are infused with Hernö Old Tom Gin and baked with egg whites to make them extra fluffy.
Cream together the butter and sugar and then beat in the egg whites.
Add the cocoa, cornstarch, flour and salt.
Add the gin and vanilla.
Mix until well combined.
Roll the dough into a ball and cover in cling film. Chill for a few hours.
Roll the dough into small balls and drop into a bowl of icing sugar, making sure to coat all sides of the cookie.
Lay on a baking sheet spread with parchment paper.
Bake for 25 minutes at 180'c until the cookies have risen and cracked.
