You must refrigerate the dough for at least one hour before baking.

Cream together the butter & sugar.
Add the vanilla & mix through.
Add the flour. Mix to incorporate.
Fold in the chocolate chips.
Wrap in cling film & refrigerate for an hour or two.
Heat oven 160 degrees. Cut into slices. Bake for 18-20 mins. Allow to cool completely.
Melt chocolate. Dip shortbread in to coat. Allow to set.
Serve.
