Perfect for Breakfast, Brunch, Lunch, Dinner, Tea, Supper... Whenever!
I whipped this up from things I had lying around. If you didn't already have some spaghetti sauce on hand, you could use salsa or pretty much any kind of bulky sauce to stretch the meal a little more.

  • Step 1

    Heat a frying pan over a medium heat. Once at temperature, warm your tortilla on both sides lightly.

  • Step 2

    Remove tortilla and add your eggs. Basically, you're scrambling them so cook them to your liking.

  • Step 3

    Once your eggs are done to your liking, put them in a line down the centre of your tortilla. Dump in the spaghetti sauce and chillies, and heat that.

  • Step 4

    When the sauce is warm enough (we don't need it hot hot hot) put it on top of the eggs, down the middle line of your tortilla.

  • Step 5

    Spoon over the top your sour cream, sprinkle the chives over the top of it all.

    You can eat it like this, or wrap it all up and eat it like that...

    Om nom nom!
