Chicken Fiesta Casserole
Great for feeding a crowd.
Serve with guacamole (I have a recipe on my projects).

Step 1Heat oven 175 degrees.
Boil the pasta until cooked through. Drain.

Step 2Combine sour cream, salsa, cumin, garlic & onion salt.

Step 3Combine the sour cream mixture with the pasta.

Step 4Add the chicken, corn & beans.
Stir to combine.

Step 5Add 1 cup cheese.
Stir through.

Step 6Pour into a dish.
Top with remaining cheese.

Step 7Bake for 15 mins.
Serve on its own or with guacamole.
