Chicken Fiesta Casserole
Great for feeding a crowd.
Serve with guacamole (I have a recipe on my projects).
Heat oven 175 degrees.
Boil the pasta until cooked through. Drain.
Combine sour cream, salsa, cumin, garlic & onion salt.
Combine the sour cream mixture with the pasta.
Add the chicken, corn & beans.
Stir to combine.
Add 1 cup cheese.
Pour into a dish.
Top with remaining cheese.
Bake for 15 mins.
Serve on its own or with guacamole.
