Step 1Rub together the butter, self raising flour and sugar into a crumb.

Step 2Whisk in the eggs.

Step 3Add the gin, rosewater and chopped cherries.

Step 4Scrape into a greased baking tin.

Step 5Bake in a hot oven at 180'C for 40 minutes until golden.

Step 6Place the sugar and crushed rose petals in a bowl.

Step 7Add the rosewater and a splash or two of gin.

Step 8Stir together until you have a thick runny icing that's not too watery.

Step 9Spread the icing on top of the cake.

Step 10Top with a few cherries and serve.
