  • Step 1

    Chop the chicken breast to bite-sized pieces,dry them with a paper towel and marinate with pepper powder , tenderizer and ginger garlic paste for 30 minutes in the fridge before proceeding to the next marination

  • Step 2

    Next marination consists of making mozzarella cheese or mascarpone cheese paste. Add curd ( thick ) or sour cream , cream corn flour ,chili and coriander paste,salt ,oil,garlic powder,cardamom powder and mix well. Set this to marinate for around 2-4 hours.

  • Step 3

    Thread the chicken on wooden or steel skewers (steel distributes the heat more evenly but wooden are just fine) and put on the hottest possible setting in your oven ,( possibly on broil mode and cook for 10 minutes on each side till a rich light color is seen on the kebabs)

  • Step 4

    4. Sprinkle on a dash of lime juice for a bit of tang and enjoy!
