These pancakes are not only beloved by children to eat, but also very easy for them to help to make. They are perfect for those days when lunch or tea takes you by surprise, as they are made from storecupboard essentials. Older children can easily make these on their own. Maybe even for you! For tea! Younger children can do all the mixing and stirring by themselves (they are almost impossible to mess up) but will need a hand with the hot stuff. Instructions

  1. Put the flour, baking powder, salt and mustard powder in a large bowl (life is too short to sift), then stir in the cheese and sweetcorn.

  2. Lightly beat the egg and milk together in a mug, jug or small bowl, then gently stir into the flour mixture to form a thick batter. If you want to spice it up a bit, fry the spring onions (borrowing a bit of your knob of butter) and add them to the batter.

  3. Put the batter in the fridge for an hour or so (less in a food-related emergency) to thicken up.

  4. Melt the butter in a large frying pan over a medium heat until it is bubbling. Drop large spoonfuls of the batter into the pan. Make sure you space them well apart, as they have a habit of spreading and jostling one another. You will probably have to cook them in batches. Cook for about three minutes, then flip over for another three minutes until they are golden brown and crispy. Place on kitchen paper and keep warm in a single layer in an oven preheated to 150°C/fan 130°C/gas mark 2 while you cook the rest. You may have to increase or reduce the heat under the frying pan, especially for the subsequent batches, to avoid scorching any of the pancakes.

  5. Serve with brown sauce or, if you have the time and energy, these are delicious with some finely chopped avocado and tomato.
