Tom treated me to a KitchenAid mixer for Christmas and I couldn't wait to give it a whizz (pun intended), so I baked a batch of cat macaroons for our friend's housewarming party.
Tom treated me to a KitchenAid mixer for Christmas and I couldn't wait to give it a whizz (pun intended), so I baked a batch of cat macaroons for our friend's housewarming party.
Blend together the icing sugar and ground almonds in a blender before sieving into a bowl.
Crack the whites from two eggs into a bowl and measure out the sugar.
Whisk the egg whites on a low speed until frothy, then increase the speed and whisk until they form soft peeks.
Turn down the speed a little and add the sugar in thirds until the meringue forms thick peeks.
Fold the ground almond into the egg whites.
Scoop the batter into a piping bag and pipe out 12 small macaroon discs onto a baking sheet.
Add two smaller dots above each macaroon to look like ears. To make them look like cat ears, use a knife to turn the dots into mini triangles.
Bake at 150'C for 12 minutes.
Leave to cool and then pair the macaroons up with ones that match.
Fill with your desired filling and use a black edible marker to draw cat faces on.
