You do not have to add the pecans to the top of the muffins.

You Will Need (20 things)

  • Muffins

  • 2/3 cup Oil
  • 1/2 cup Brown Sugar
  • 1/4 cup Sugar
  • 2 Eggs
  • 2 1/4 cup Plain Flour
  • 1 tsp Bicarbonate Of Soda
  • 1 tsp Baking Powder
  • 2 tsp Cinnamon
  • 1 tsp Nutmeg
  • 1/2 tsp All Spice
  • 1/2 tsp Salt
  • 1/2 cup Butter Milk
  • 1 cup Carrot(s) Grated
  • Filling

  • 4 oz Cream Cheese
  • 2 tbsp Sugar
  • 1 tbsp Plain Flour
  • Optional

  • 1/2 cup Pecans Chopped

Steps (7 steps, 40 minutes)

    Heat oven 200 degrees.

    Beat oil & sugars together.

    Add eggs.

    Mix through.

    Combine the flour, bicarb, baking powder, cinnamon, nutmeg, all spice & salt.

    Combine wet & dry ingredients together.

    Add butter milk & carrot.

    Stir to combine.

    Combine all the filling ingredients together.

    Pipe into centre of the muffins.

    Sprinkle the pecans on top.

    Bake for 15-16 mins.

    Cool & serve.
