I found this recipe in a book "Backen. Die Kleine Schule". I think it's quite simple and very delicious. I made this cake for a halloween party. I use orange jam and marshmallows fondant.

You Will Need (9 things)

  • Apricot or Orange Jam
  • 250 g Sugar
  • 6 Egg(s)
  • 250 grated Carrot(s)
  • Salt
  • 1 grated Lemon peel
  • 100 g Plain Flour
  • Fondant
  • 300 g grated Walnuts

Steps (1 step, 120 minutes)

    Whisk the egg yolks with 85g sugar, the lemon peel and a bit of salt. Beat up the egg whites with the rest of the sugar. Add the whipped whites to the yolks-mixture.
    Mix the grated carrots and walnuts with the flour. Add this to the egg-stuff.
    Pour the mixture in cake form, bake it in 190 C oven for 50-60 minutes.
    When it cooled down, glaze it with the jam, then decorate with fondant or almond chips.
