Carrot & coconut loaves.
These loaves are really tasty.
You could replace the coconut with raisins or another dried fruit.

Step 1Heat oven 180 degrees.
Cream the butter & sugar together until light.

Step 2Add eggs one at a time.
Stir to combine.

Step 3Add flour & cinnamon.
Stir to combine.

Step 4Add carrots & coconut.
Stir to combine.

Step 5Pour into tin.
Bake for approx 30 mins.

Step 6Allow to cool completely.

Step 7Add icing to the top.
Sprinkle with toasted coconut.

Step 8Serve.
