These are great little caramels with yummy coconut and marshmallow in them. I make them every Christmas and they're one of my favorite. This year I gave a few to my friend because she loves them and no one in her house likes coconut, so normally, she doesn't get any. I'm sorry I don't have more pictures for the steps, hopefully I can upload some more the next time I make them. The caramels I use are small squares, maybe about 1/2inches. They're individually wrapped. This recipe makes 4 dozen about 1.5 inch caramels.

Description

These are great little caramels with yummy coconut and marshmallow in them. I make them every Christmas and they're one of my favorite. I'm sorry I don't have more pictures for the steps, hopefully I can upload some more the next time I make them. The caramels I use are small squares, maybe about 1/2inches. They're individually wrapped. This recipe makes 4 dozen about 1.5 inch caramels.

Instructions

  1. Small caramels

    Place unwrapped caramels, butter, and cream in 2 quart microwave-safe dish. Microwave, uncovered, for 2 minutes, then stir. Microwave 1-3 minutes more in increments, stirring in between. Do this until smooth. Be careful not to burn the caramel. If you can, set your microwave power to medium.

  2. Stir in sugar until smooth. Add peanuts. Gently fold in marshmallows.

  3. Sprinkle coconut on two rough 10inch by 5inch pieces of waxed paper. Spoon caramel mixture down the center of the coconut. Using the waxed paper, coat caramel with coconut and roll into two 10inch logs.

  4. Put the logs in the fridge for 4 hours. Here, you can take the wax paper off and wrap in plastic wrap, but recently, I've just left the wax paper on.

    You can take off the plastic wrap/waxed paper now to cut them, but I've left the waxed paper on the last two times. I don't think it matters either way, whatever in easier for you. Cut the logs into 1/2 inch slices.

    Store in an airtight container in the refrigerator.
