You can fill the cannelloni with any filling you like.
Brown the beef.
Add the sauce.
Let the sauce reduce a little.
Add the ricotta.
Let the mixture cool.
Spoon the sauce mixture into the cannelloni shells.
Place into an oven dish.
Pour the remaining sauce over the top of the cannelloni.
Grate mozzarella cheese over the pasta.
Bake in the oven at 180 degrees for 30-35 mins.
