Broccoli & cream cheese soup

A good easy soup to make in the cold winter months.

I blend the soup, but you could leave it chunky if you prefer.

I used chicken stock but it could easily be made with veg stock to keep it vegetarian.

You Will Need (5 things)

  • Leek
  • Broccoli
  • Potatoes
  • veg or chicken Stock
  • 1/2 package Cream cheese

Steps (3 steps, 60 minutes)

    Chop the leek & potatoes up & add the the pot.

    I used frozen broccoli so no preparation required. If your using fresh then you will need to chop this up too & add it to the pot.

    Add the stock to the pot & bring to the boil.

    Reduce the temp to simmer & cook out until the veg is soft & cooked through.

    Once cooked add cream cheese to the pot & stir until combined.

    Blend the soup to a smooth puree or leave as is.

    Serve with crusty bread.
