Description

This dish is such a fun twist on dinner time! Add lean bacon to high fiber spaghetti, veggies and marinara sauce and top it all with a runny egg and you have a creamy, decadent tasting, single serving dinner that is surprisingly easy to make and health conscious!

Instructions

  1. Cook spaghetti according to package directions for al dente then drain and rinse with cold water

  2. Spray a small skillet with cooking spray. Add garlic and onion and cook over medium heat for 2-3 minutes

  3. Add spinach to skillet and continue to cook until it wilts, another 2-3 minutes

  4. Pour cooked pasta, marinara and cream into the skillet. Stir to combine

  5. Season with parmesan, salt, pepper and crushed red pepper to taste and continue to heat until sauce is warmed

  6. Remove pasta mixture to a serving dish. In the same small skillet, cook bacon over medium heat until crisp. Set cooked bacon aside but do not discard grease

  7. Cook egg over medium-low heat in the skillet, leaving the yolk runny. This is important because it will become a part of your pasta’s sauce

  8. Crumble cooked bacon over prepared pasta and top with egg. Break yolk so that it mixes in with prepared pasta
