Bramble Whisky Cake

A chocolate cake infused with bramble whisky liqueur!

Inspired by my Dad favourite tipple, this chocolate cake is infused with Demijohn's Bramble Scotch Whisky Liqueur.

You Will Need (12 things)

  • 300 g Flour
  • 300 g Sugar
  • 3 Eggs
  • 150 g Butter
  • 150 g Chocolate Spread
  • 2 oz Bramble Scotch Whisky Liqueur from Demijohn
  • 4 tbsp Milk
  • For the icing

  • 150 g Chocolate Spread
  • 1 oz Bramble Scotch Whisky Liqueur from Demijohn
  • 150 g Icing Sugar
  • Berries

Steps (8 steps, 35 minutes)

    Cream together the butter, chocolate spread and sugar in a bowl. Beat in the eggs and add the Bramble Scotch Whisky Liqueur. Mix in the flour and a few tables of milk until you reach the perfect consistency.

    Divide the batter between two greased cake tins and bake at 200'C for 25 minutes. Leave to cool.

    To make the icing, beat together the chocolate spread and icing sugar.

    Add a splash of liqueur making sure the icing doesn't get too runny.

    Spread the bottom tier of the cake with half of the icing.

    Place the second cake on top and spread the top with the remaining icing.

    Top with fresh berries.

    Sprinkle with some icing sugar to serve.
