Blueberry (Or Blackcurrant) Syrup

This can be made with blueberries (if you see them cheap in the supermarket in the UK), blackcurrents and/or blackberries (free if you have a bush near you).

You Will Need (6 things)

  • 1 packets Blueberries
  • 2 tbsp Honey
  • 50 ml Water
  • Saucepan
  • Wooden Spoon
  • Stove

Steps (3 steps, 10 minutes)

    Rinse your berries and put them in the saucepan with the honey and water. I use a regular supermarket punnet- about enough to cover the bottom of a plate in a single layer.

    If they are bruised and squishy, all the better. I always make this with reduced/older berries to use them up.

    Put them on a high heat for 10 min, covered. They will bubble and foam. Stir half way through.

    Don't worry, they won't 'catch' because of the water.

    Pour the mixture into a bowl to cool it (it will be VERY hot, much too hot to eat).

    It can be served hot or cold now. Some uses:
    -in cocktails
    -on bread like jam
    -stirred into yoghurt
    -in baking
    -over icecream
    etc'.

    It lasts a day or 2 in the fridge.
