Black Beans & Rice

You Will Need (13 things)

  • 2 tsp Salt
  • 3 tbsp Olive Oil
  • 1 ½ cup Brown Rice
  • 2 -3 Garlic cloves (minced)
  • 1 Green or Red Pepper
  • 1 Small Onion
  • 2 (15 oz) cans of Black Beans /rinsed & drained
  • 1 cup of vegetable Broth
  • 2 tbsp Red Wine Vinegar
  • 3 Small Bay Leaves
  • ½ tsp Pepper
  • ¼ tsp Cumin
  • Scallions for garnish

Steps (2 steps, 45 minutes)

    Rice:
    Combine 3 Cups of water with 1 tsp salt & 1 ½ tsp olive oil in a medium saucepan. Bring the water to a boil, and stir in the rice. Cover the saucepan & reduce heat to low. Cook for 40-50 minutes or according to package directions. (Some brown rices take longer to cook than others).

    Beans:
    Heat 1 ½ Tbsp of olive oil in a large sauce over medium heat. Saute onion, green/red pepper, & garlic until softened. (~5 minutes) Add beans, broth, vinegar, bay leaves, pepper, cumin & 1 tsp salt. Cover the saucepan & bring to a boil. Reduce heat to low & simmer for 10 minutes. Remove the bay leaves. Serve over rice with scallions & a few dashes of hot sauce.
