Black Bean, Sweet Potato & Quinoa Veggie Burger

This veggie burger is packed full of nutrients with sweet potato, black beans, and quinoa being the main ingredients. When topped with your favourite burger toppings this is the perfect BBQ dish that even the meat eaters will want to try!

You Will Need (12 things)

  • 1 ½ cup cooked Quinoa
  • 2 cup cooked Sweet Potato
  • 1 can Black Beans
  • 1 ½ cup Rolled Oats
  • ½ cup finely chopped Onions
  • ¾ cup Corn
  • 2 tbsp Pumpkin Seeds
  • 2 tbsp Sunflower Seeds
  • 2 tsp diced Garlic
  • 1 tsp Oregano
  • 2 tsp Cumin
  • 1 tsp Paprika

Steps (3 steps, 90 minutes)

    Cube the sweet potato and boil it until soft; cook the quinoa. In a large bowl smash the uncooked black beans until about half of them are smashed. Combine the cooked sweet potato, quinoa, and black beans, further mashing them all together.

    Add in all other ingredients and combine totally. Using your hands, form the patties and lay them evenly spaced on a lightly greased pan (will likely take 2 pans or 1 large one). This amount should make 9 larger patties or 12 smaller.

    Cook on each side until browned – approximately 15-20 mins on each side.

    Serve on a bun topped with your favourite burger toppings and enjoy!
