Unfortunately I don't have any step by step pictures to show you but its a very simple recipe that doesn't have to be perfect! You can buy these in coffee shops and they are so expensive! Making these is impressive for guests and a nice treat dipped in coffee or hot chocolate I have only given you the basic ingredients so feel free to add different flavors, for example change the vanilla extract to orange, add nuts, dried fruit, dip them in chocolate... be adventurous! These make a brilliant Christmas gift for people as you can personalize them to the receivers tastes

Instructions

  1. Preheat the oven to 180c (fan oven) Cream together the butter and sugar.

  2. One by one add the eggs. Many people beat the eggs before adding to stop the mixture from splitting - Don't bother. If the mixer is on full blast it shouldn't, and if it does, when the flour is added it will be combined anyway.

  3. Add the flour, cup by cup. Then go in with the baking powder, a pinch of salt and vanilla extract.

  4. Once its combined it should be a bread like consistency. We will be rolling the dough out so if its too wet add a bit more flour, if its too dry add a splash of milk.

  5. For this mixture I cut the dough into two separate balls. Dust your surface well, and roll each of the balls into a log shape. It will look quite thin and not like much at the moment but it will rise slightly and spread apart, so I suggest using two baking sheets. There's no need to grease the baking sheet.

  6. Bake these in the oven for about 15-20 minutes. It depends totally on the oven you have at home, so keep that in mind when cooking. They should be firm on top. Take the two logs and slice them into edible pieces. About an inch is a nice size. Turn the oven down to 140C (fan) Put them back on the baking sheet so they dry out and resemble the texture and crunch that Biscotti are known for. They should go in for another 15 minites. After about 10, see if they are hard on top.
