Beetroot Brie Blue Cheese Naan Pizza Recipe
Although a flatbread pizza is not the same as a traditional pizza, it's a good option when you don't have much time but crave some carbs. Here I have combined whole wheat naan bread, roasted beets, three kinds of cheese, and pine nuts. Scrumptious!
Wash the beets scrubbing them but not peeling then dry. Preheat oven to 210-215 degrees C (420-430 degrees F). Wrap each beet up in foil (better double layer). Place on a baking tray and roast for approximately 50-60 minutes. Check it with a wooden stick - if it goes through the beet easily, they are ready. Otherwise, cook them for an additional 10-15 minutes or until ready. Off heat but leave the beets in the oven for 20-30 minutes then remove from oven and completely cool. Peel and slice.
Preheat oven to 200 degrees C (400 degrees F). Arrange Naan bread onto a baking sheet.
Spread the cream cheese over the bread. Arrange the beets. Top with the brie and crumbled blue cheese. Finish with the pine nuts.
Bake in the preheated oven for about 7-9 minutes or until the edges are crispy and browned and the cheese is melted. Remove and enjoy.
