Our Beet & Walnut burger is definitely our most requested recipe request. Even meat-lovers enjoy it!
Grind up beets & walnuts with a food processor, mix in the eggs, potato starch, and panko. Season with salt & pepper to taste. Form into patties and put into a non-stick pan with olive oil. Saute patties, 3 minutes per side to get a nice crust on the outside.
For the Greek Yogurt Sauce: 1 cup Greek yogurt, clove of chopped garlic, lemon zest, fresh dill, parsley, chives, and a pinch of cayenne pepper.
Toast bun and top patty with arugula, cherry tomato, red onion, feta, and Greek yogurt sauce.
