Quick, easy and healthy breakfast muffins!
These are easy to make, healthy and delicious muffins!
Best eaten warm.
Found the recipe on food.com, but I reduced the amount of sugar.
Calories: 181 a piece
Makes 9 muffins.
Beat two eggs slightly in bowl 1 (large).
In bowl 2 (small), mash bananas until there are a few lumps left.
Mix all dry ingredients (sift flour) in bowl 1 with eggs until well-combined.
Add mashed bananas (bowl 2) into the mixture (bowl 1) and mix.
Add vanilla and butter to mixture and mix.
When batter is well blended-it will be thick but not stiff-place in muffin tin.
Bake for 15-20 minutes at 180 C / 350 F or until knife inserted in muffin comes out clean.
