Description

For those who want a delicious moist cake and have a surfeit of ripe bananas

Instructions

  1. Small 2020 03 21 192012 1

Gather all the ingredients - I'm using wholemeal flour because that's what I had to hand, but plain is fine Preheat the oven to 200C

  2. Small 2020 03 21 192108 2

Sift 10 oz (270g) flour into a large mixing bowl

  3. Small 2020 03 21 192135 3

Measure the cinnamon (1 heaped tbsp), bicarb (2 tsp) and salt (1/2 tsp)

  4. Small 2020 03 21 192252 90780852 10163094055765507 6820617703401717760 o

    Sift in the dry ingredients

  5. Small 2020 03 21 192625 4

Measure 4 oz (110g) sugar into a microwaveable bowl

  6. Small 2020 03 21 192650 5

Add the butter and microwave until partially melted (30 sec)

  7. Small 2020 03 21 195718 6

Beat together the butter and sugar with a knife......

  8. Small 2020 03 21 195800 7

    ...until smooth

  9. Small 2020 03 21 195830 8

Add the eggs and beat in

  10. Small 2020 03 21 195843 10

    Then the vanilla

  11. Small 2020 03 21 195922 11

Peel the bananas. The riper the better!

  12. Small 2020 03 21 200003 12

Mash the bananas into the mixture. The easiest (and messiest) way is to squeeze between your fingers.

  13. Small 2020 03 21 200104 13

Beat together with the knife to make a batter. Some small lumps of banana are fine, as long as there are no big bits.

  14. Small 2020 03 21 200320 85072450 10163094056955507 8339422575692087296 o

Measure out a small amount of milk into a cup

  15. Small 2020 03 21 200333 14

Add the juice of 1 lemon and mix into the batter

  16. Small 2020 03 21 200404 15

Make sure the dry ingredients are evenly mixed

  17. Small 2020 03 21 200431 16

Grease a baking tin / muffin cases with butter, ready to go into the oven. (again, the best / messiest way to do this is with your fingers)

  18. Small 2020 03 21 200443 17

Pour the batter into the dry ingredients

  19. Small 2020 03 21 200737 90568203 10163094058275507 2085124240440295424 o

Mix well with a wooden spoon. The lemon juice will react with the bicarbonate, so do this as quickly as possible

  20. Small 2020 03 21 200746 18

Pour into the cake tin / muffin cases and put in the oven. Bake for 40 min - 1hr, less for muffins. The cake is done when you can stick a skewer in and it comes out clean.

  21. Small 2020 03 21 200808 19

Remove from the oven and allow to cool for 10-15 mins

  22. Small 2020 03 21 200829 20

Turn out onto a wire rack and leave to cool completely.

    "Where's my cake? I'm hungry!"
