This is a low fat recipe that can easily be adapted from chicken to fish, which definitely works just as we'll, it's a easy week day meals that takes little effort. Picture also includes Asparagus with crispy crumbs, which is featured as another project on my profile Enjoy :p
Preheat oven to 200°C. Brush the base of an ovenproof casserole dish with 1/4 tsp of the oil. Place the chicken in a single layer, in the prepared dish. Score the chicken and season with freshly crack pepper and crushed garlic.
Combine the olives, tomato and capers in a medium bowl. Season with salt and pepper. Spoon olive mixture evenly over chicken and drizzle with the remaining oil.
Bake in preheated oven for 15 minutes or until chicken is cooked through. Remove from oven. Divide the white bean & baby spinach salad among serving plates. Top with chicken and spoon over the olive mixture. Serve immediately.
