I love the combination of mushrooms and chicken, but I can't go past anything with baked mushrooms. If your like me give this recipe a go and please let me know how it goes.

You will need

1 cup Baby Peas Curly Fettuccine Enough to serve 4 people Shaved Parmesan Cheese To serve 1 Bunch of Broccolini Diced (including stalk) Assorted Mushroom(s) (I use button and Swiss brown) 2 Chicken Breast Seasoned Non Stick Cooking Spray 1 Of a tub Philadelphia Cream Cheese Salt & Pepper To season 1 Onion(s) Diced 2 Garlic Cloves Crushed

I love the combination of mushrooms and chicken, but I can't go past anything with baked mushrooms. If your like me give this recipe a go and please let me know how it goes.

Instructions

1. 

   Preheat oven to 180•c, lightly grease an oven proof dish with cooking spray. Season chicken with salt and pepper, place into dish with mushrooms and bake for 10 minutes or until cooked through.

2. 

   Meanwhile boil a pot if salted water, once boiling cook pasta following packet instructions and in the lasts 10 minutes if cooking add the broccolini to the pot to blanch. Once cooked, strain from water.

3. 

   Whilst pasta is cooking, heat a non stick frying pan, cook onions, garlic and peas.

4. Once pasta and broccolini is cooked add to the frying pan of onions. Add mushrooms, then add the spinach to wilt. Mix in cream cheese. Heat through.

5. Plate up into a bowl, topped with sliced chicken breast and shaved Parmesan. Serve immediately.
