Ok, so you're on a diet, right? And you're supposed to steer clear of anything sweet. But when the crave kicks in, just dig up some leftover fruit from your fridge and whip up this delicious crisp. It can be made with almost any fruit you've left, especially that bruised, past-their-peak one that nobody is going to eat anyway. Oh, and this sweet is suitable for vegans, as it doesn't contain any dairy products or eggs (yogurt is just a topping, so it's optional).

It can be made with almost any fruit you've left, especially that bruised, past-their-peak one that nobody is going to eat anyway. Oh, and this sweet is suitable for vegans, as it doesn't contain any dairy products or eggs (yogurt is just a topping, so it's optional).

Instructions

    Preheat the oven to 190°C (375°F), gas mark 5. Peel, core and slice the apples (don't forget to cut out all the bruises). Weight them after you've done this: they should be more or less 500 grams. If they're not because you had to cut out more, add some more apple slices till you reach about 500 grams.

    Put the apples in a bowl with the lemon juice, water and 110g of the brown sugar and toss together. I used muscovado sugar because I like that hint of liquorice it has, but you can get by with just regular soft brown sugar.

    Place the apples in a greased ovenproof baking dish.

    Mix together the sunflower oil with the remaining sugar, and then stir in the flour and oats until evenly mixed.

    Pour over apples and spread evenly.

    Bake for 35 minutes or until the top is golden brown.

    Serve warm with a spoonful of yogurt (either Greek yogurt or sweetened regular yogurt). You can also use creme fraiche or soy yogurt if you're vegan. TA-DAHH! Easy, right?
