You Will Need (17 things)

  • Pastry

  • 10 oz Plain Flour
  • 3 oz Icing Sugar
  • 1/4 tsp Salt
  • 6 oz Butter
  • 2 eggs
  • Baileys Caramel Filling

  • 14 oz Caramels
  • 1/3 cup Baileys
  • 1/2 tsp Salt
  • Ganache

  • 12 oz Chocolate Chopped
  • 5 oz Heavy Cream
  • 5 oz Baileys
  • 1 tbsp Corn Syrup
  • 2 oz Butter Room temp
  • 1/8 tsp Salt

Steps (9 steps, 60 minutes)

    Heat oven 190 degrees.

    Pastry...

    In a food processor place the flour, sugar, salt & butter.

    Pulse until combined.

    Add the egg, a little at a time until a dough is formed.

    Roll out the dough.

    Press into a dish.

    Bake blind for 18-20 mins.

    Remove beans & cook for a further 7 mins.

    Remove from the oven & cool.

    Caramel filling...

    Place all ingredients in a bowl.

    Heat in the microwave on 30 second increments until melted & smooth sauce is achieved.

    Pour the caramel into the base.

    Allow to set.

    Ganache...

    Heat the cream baileys & corn syrup together.

    Pour over the chocolate & allow to melt for a few mins.

    Stir to make sure there are no lumps.

    Stir in the butter.

    Pour over the caramel.

    Allow to set.

    Cut & serve.
