Instructions

  1. In a large skillet over medium-high heat, warm the coconut oil. Add the onion and cook for 3 minutes, or until the onion begins to soften.

  2. Stir in the curry powder and cook for another few minutes, until well incorporated.

  3. Add the bok choy and cook until wilted, about 5 minutes.

  4. Add the fish sauce, coconut aminos, and coconut milk. Cook for just a few more minutes, then garnish with the cilantro and serve.
