Avocado Egg Salad Sandwich

A twist on the classic egg-mayo sandwich!

You will need

1 tsp Black Pepper 1 tsp Lemon Juice 1 ripe Avocado mashed 1 boiled Egg coarsely chopped 1 tsp Salt 4 x wholemeal Bread 1 handful Baby Spinach

Instructions

1. In a bowl, mix together the mashed avocado and egg. Do not overmix, you want it chunky, not pureed.

2. Add the lemon juice, salt and pepper till well combined.

3. To assemble, butter and toast your bread slices, sandwich the avocado egg salad with baby spinach, and cut diagonally into two.
