Delicious veggie dish. Lots of flavour.

You will need

400 g Aubergines 1 tsp Fresh Ginger 5 cloves Garlic Chopped 1/4 tsp Salt 1 tsp Corn Flour + more for coating 1 1/2 tbsp Soya Sauce 2 tsp Sugar 2 1/2 tbsp Oil 1/4 tsp Pepper

Delicious veggie dish. Lots of flavour.

Instructions

1. 

   Fill a bowl with one tsp of salt & cold water. Place aubergine in water & weigh down for 15 mins. Drain & pat dry.

2. 

   Mix soya sauce & corn flour.

3. 

   Coat aubergine with extra cornflour

4. 

   Fry the aubergine in a little oil for 8-10 mins. Remove to a dish.

5. 

   Fry the garlic & ginger in oil.

6. 

   Return the aubergine to the pan.

7. 

   Add the soya sauce, salt & pepper & stir to coat.

8. 

   Serve.
