Apricot Thyme Syrup/Apricot Soda
Sweet apricots have subtle flavor, so, in order to make this soda pop, I used nectar. Its concentrated flavor and crunchy brightness are wonderful.
Makes 2 cups syrup

You Will Need

Step 1
Bring nectar to a boil in a medium saucepan over high heat; then add thyme. Remove the pan from the heat and let steep for up to 1 hour. Remove thyme sprigs. Pour syrup into an airtight container and store in the refrigerator for up to 1 week.

To make a glass of apricot soda: Pour ¹⁄³ cup apricot nectar into a glass, add seltzer, and mix gently. Add ice, garnish with a thyme sprig, and serve.
