Wow. Last Sunday was my Dad's birthday, but it took me a while to figure out what to bake. I finally baked something today, a delicious Apple Strudel. The original recipe is here. I made a few tweaks and it ended up so yummy!! Here's mine: **Makes 8 pastries**

Instructions

  1. Small 6399

Preheat oven to 350 degrees. 1. In a small saute pan, over medium heat, combine the bread crumbs and a half stick of butter (melted), stir occasionally (I used a spatula); you want them to get a golden brown color.

  2. 2. While the bread crumbs are heating, in a semi-large bowl, mix the apples, sugar, raisins, lemon juice, and cinnamon. Saute them in a large pan for about 8 minutes, making sure to coat each apple slice in the sugar and cinnamon.

  3. 3. While the apples are cooking, cover a cookie sheet with foil (easy clean-up!!).

  4. 4. Take out the pastry sheets and cut off about 2 or 3 inches, leaving them in squares.

  5. 5. Gently pull apart about three of the pastry sheets from the rest, placing them on a flat working surface. Sprinkle the middle of the sheets with bread crumbs (about two tablespoons-worth), keep in mind that you'll be folding them.

  6. 6. Spoon and 8th of the apple/raisin mix on top of the bread crumbs in the middle of the sheets. Fold the left and right sides of the pastry sheets over the apples and raisins (I brushed the folds with more of the melted butter to help them stay), like you're making a pouch. Then fold the other two sides of the pastry sheets, completely covering the fruits. Transfer the pastry onto the cookie sheet and brush once more with butter, covering the whole top of the pastry.

  7. 7. Repeat steps 5 and 6 to complete the other 7 pastries.

  8. Small 6400

    8. Place the cookie sheet with all 8 pastries into the oven and bake for about 20 minutes. Make sure to check on the pastries, taking them out of the oven when their shells are golden and crispy (when I took them out of the oven, I brushed them with more melted butter, it gives them a really yummy look).

  9. Small 6401

    9. Dust the pastries with confectioners sugar. Enjoy! :)

Everyone loved them, they were sooo yummy!! :)

The best part was, there weren't many dishes to have to clean up!
